Smoked Salmon and Avocado with Wasabi Dressing

I’m off to watch Australia kick ass against Italy in an hour’s time. So I’ve slapped together my favorite snack to keep me going until 3am.

This one’s dead simple and very tasty.

What you need:

- Rice Crackers
- Smoked Salmon
- Egg Mayonnaise
- Wasabi
- Sliced Avocado

Mix Egg Mayonnaise with a generous amount of wasabi in a small bowl.

Assemble smoked salmon and avocado on a rice cracker and top with a dollop of the wasabi dressing.

Enjoy!

Yum! (although not a fan of rice crackers - looks like it would also be good on a toasted English Muffin)
